Ingredients
- Courgette - 1 piece
- Young zucchini - 1 piece
- Eggplants - 1 piece
- Tomatoes - 2 pieces
- Cilantro - 1 bunch
- Garlic - 5 cloves
- Olive Oil - 5 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Orange Bell Peppers - 1 piece
Step by Step guide
Step 1
Wash the zucchini and cut into rings about 0.5 cm thick.
Step 2
Cut the young squash.
Step 3
Slice the eggplant into rings as well.
Step 4
Place the eggplant in a separate bowl. Salt it and let it sit for 5–10 minutes.
Step 5
Cut the bell pepper into strips.
Step 6
In a separate container, mix the olive oil and garlic, pressed through a garlic press.
Step 7
Add salt and pepper to taste and mix until smooth.
Step 8
Combine all the vegetables in a deep bowl and drizzle with the garlic olive oil. Mix well.
Step 9
Preheat the grill pan well and place the sliced vegetables on it. Sauté on both sides until golden brown.
Step 10
Slice the tomatoes into rounds.
Step 11
Arrange the vegetables alternately on a flat plate, garnishing with cilantro.
