Gruyere Fondue with Caramelized Shallots
Ingredients
- Butter - 1 tablespoon
- Shallot - 6 oz
- Sugar - 1 teaspoon
- Dry White Wine - 1½ cups
- Gruyère cheese - 14.1 oz
- Wheat Flour - 2 tablespoons
- Ground Nutmeg - a pinch
- French Baguette - 1 piece
Step by Step guide
Step 1
Melt the butter in a skillet over medium heat. Add the thinly sliced shallots and sauté for 3 minutes. Reduce the heat to low and sprinkle with sugar, salt, and pepper. Cook for another 15 minutes until the onions are caramelized. Transfer to a small bowl.
Step 2
Pour the wine into the skillet and bring to a boil for 1 minute.
Step 3
Pour the wine into a small deep skillet or pot and set over low heat.
Step 4
In a small bowl, mix the grated cheese with the flour.
Step 5
Add half of the caramelized shallots to the wine and gradually stir in the cheese, mixing constantly. If the mixture is too thick, add more wine. Then add nutmeg, salt, and pepper to taste.
Step 6
Transfer the cheese mixture to a fondue pot, place it over a burner, and sprinkle the remaining caramelized shallots on top. Serve with the broken pieces of baguette.
