Description
It is better to choose lean pork to reduce the amount of fat. Alternatively, trim the fat.
Ingredients
- Pork Blood - 3 lbs
- Curing Salt Mixture - 0.5 oz
- Salt - 0.5 oz
- Sugar - 0.1 oz
- Garlic chips - 0.2 oz
- Cardamom - 0.1 oz
- Ground Nutmeg - 0.1 oz
- Ground Black Pepper - 0.1 oz
Step by Step guide
Step 1
Rinse the pork under running water and dry it with paper towels.
Step 2
Cut into pieces about 2x2 cm, place in a bowl, and sprinkle with a mixture of regular and curing salt. Mix thoroughly for 5 minutes. Then cover with plastic wrap or a lid and refrigerate for 24 hours.
Step 3
Add 100 ml of ice-cold water and mix thoroughly until the meat becomes sticky and white fibers form.
Step 4
Add sugar and spices, and mix well. Place a baking bag in the ham maker and fill it with the meat, pressing it down firmly. Twist the bag, insert the piston with a spring, and close the lid. Leave in the refrigerator overnight.
Step 5
Select the oven setting for both top and bottom heat with convection; set the temperature to 212°F. Place the ham maker inside for 3 hours. Monitor with a built-in thermometer to ensure the temperature does not exceed 176°F inside the meat.
Step 6
Cool the ham maker first at room temperature, then refrigerate overnight. After that, the ham can be removed from the ham maker.
