- Apple juice with pulp - 8 fl oz
- Smoked Ham on the Bone - 10 lbs
- Brown Sugar - 4.2 oz
- Dijon Mustard - 5 tablespoons
- Honey - 1.3 oz
Step by Step guide
Step 1
Preheat the oven to 320°F. Place the ham in a baking dish and pour apple juice over it. Cover the ham with parchment paper and then wrap it with foil. Bake the meat for 3 hours and 45 minutes, until the internal temperature reaches 60-144°F. Remove the meat from the oven and increase the temperature to 374°F.
Step 2
Remove the foil and parchment and drain the liquid from the dish. Trim some excess fat from the ham and spread mustard over it. Sprinkle sugar on the mustard, pressing down slightly to create a thick layer. Then brush with honey. Bake for about 30 minutes, until the meat caramelizes, basting constantly with the juices.
Step 3
Transfer the ham to a platter and cool for 45 minutes. Slice into thin pieces and serve slightly warm.
