Ingredients
- Beef hoof - 4 lbs
- Pork Blood - 2 lbs
- Cooked Ham - 2 lbs
- Rice Noodles - 10.6 oz
- Poultry - 1 piece
- Leek - 3 stalks
- Celery salt - 4 stalks
- Lemon - 2 pieces
- Prunes - 10.6 oz
- Soy Sauce - 0 fl oz
- Cilantro - 1 bunch
- Vegetable Oil - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the pork and beef bones, soup-cut beef, and whole chicken into a large pot. Cover everything with five liters of water, add celery, coriander roots, and the green part of the leek. Simmer the broth for three hours on low heat, skimming off the foam and fat, and then strain.
Step 2
Thinly slice the white part of the leek and sauté it in vegetable oil until soft. Add the onion to the strained broth. Then add the prunes along with the noodles and cook until the noodles are done.
Step 3
Season the soup with soy sauce, the juice of two lemons, salt (if needed), and pepper. Garnish with chopped cilantro and serve. You can also add sliced meat to the bowls.
