Ingredients
- Canned Baby Beets - 12 oz
- Water - ¾ ml
- Corn Starch - 1 teaspoon
- Apple Cider Vinegar - 2 tablespoons
- Sugar - 2 tablespoons
- Butter - ½ teaspoon
Step by Step guide
Step 1
Wash the beets thoroughly and place them in a microwave-safe pot with a lid. Add water and microwave for 6-15 minutes, covered, until the beets are tender. Stir every 2 minutes. Transfer the beets to a cutting board and let cool.
Step 2
Reserve 0.25 cup of the beet broth.
Step 3
Peel the beets and slice them into small thin pieces.
Step 4
In a small bowl, mix the cornstarch and vinegar. Stir well, then add the reserved broth, season with salt and pepper to taste, and add sugar. Microwave the sauce for about 2 minutes, stirring after 1 minute, until it thickens.
Step 5
Then add the beets and butter and microwave again for about 1 minute, until the beets are heated through.
