Ingredients
- Celery stalk - 2 stalks
- Carrot - 3 pieces
- Leek - 2 pieces
- Garlic - 2 cloves
- Fresh Rose Hips - 1 sprig
- Bacon - 1.8 oz
- Olive Oil - 1 fl oz
- Canned Pork with Beans - 14.1 oz
- Chicken Broth - 1 qt
- Spinach - 2.6 oz
- Frozen green bean pods - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Start by preparing the soup base: trim and finely chop the celery, peel and roughly chop the carrots, and trim, wash, and roughly chop the leeks. Peel and finely chop the garlic, then chop the rosemary. Finely chop the bacon.
Step 2
Drizzle oil in a large skillet over medium heat, then add the rosemary and chopped bacon. Sauté for a few minutes until the bacon is golden, then add the chopped celery, carrots, leeks, and garlic. Cook on low heat for about 15 minutes or until softened, stirring regularly.
Step 3
Add the beans (no need to drain them) and the broth. Bring to a boil, then reduce the heat to low for 30 minutes—add a bit more broth or water if necessary.
Step 4
Finally, add the spinach and peas and cook for another 3 minutes. Taste and season with sea salt and black pepper if needed.
