Hearty borscht without meat and potatoes
Ingredients
- Yellow Beets - 1 piece
- Carrot - 1 piece
- Onion - 1 piece
- White Cabbage - 10.6 oz
- Green peppercorns - 1 piece
- Garlic - 1 head
- Passata Tomato Sauce - 4.9 oz
- Herbs - 1 bunch
- Water - 91 fl oz
- Salt - to taste
- Green peppercorns - to taste
- Bay leaf - 4 pieces
Step by Step guide
Step 1
Grate the beet (one large or two small) and the medium carrot on a coarse grater.
Step 10
Add the onion, garlic, salt, pepper, and bay leaves.
Step 11
Let it simmer on the stove on low heat (the longer, the better).
Step 2
Shred the cabbage.
Step 3
Peel the onion. Peel several cloves of garlic (6–8).
Step 4
Slice the pepper into thin strips lengthwise.
Step 5
Add the beet to boiling water, let it boil, then reduce the heat. Cook for 15–20 minutes.
Step 6
Then add the carrot and cook for another 15–20 minutes.
Step 7
Add the cabbage and cook longer on low heat.
Step 8
Add the tomato paste and let it simmer on low heat.
Step 9
Add the green pepper.
