Herb and Garlic Baked Potatoes in Foil
Ingredients
- New Potatoes - 16 pieces
- Coarse Salt - 3 spoons
- Olive Oil - 2 spoons
- Garlic - 4 cloves
- Cumin leaves - 1 tablespoon
- Fresh Rose Hips - ½ spoons
Step by Step guide
Step 1
Cut the potatoes in half and place them in a pot. Cover with water and add salt. Bring to a boil, then reduce the heat and cook until tender, about 10 minutes. Drain the water and return the potatoes to the pot.
Step 2
Add olive oil, lightly crushed but unpeeled garlic cloves, ground cumin, and rosemary. Mix well and let it cool.
Step 3
Lay out 4 sheets of foil on a work surface and place a potato on each, adding a clove of garlic to each portion. Wrap the foil and let them sit at room temperature for 2 hours.
Step 4
Preheat the oven to 392°F.
Step 5
Place the packets on a baking sheet and put them in the oven for about 15 minutes, turning occasionally, until the potatoes are heated through. Transfer to serving plates and gently open the foil. Serve.
