Ingredients
- Wheat Flour - 14.1 oz
- Salt - to taste
- Onion - 1 piece
- Spinach - 1 bunch
- Sorrel - 1 bunch
- Cilantro - 1 bunch
- Tarragon - 1 bunch
- Ghee - to taste
Step by Step guide
Step 1
Mix flour, salt, and cold water to form a stiff dough. Cover it and let it rest for 20–30 minutes. Then, cut the dough into pieces and roll them out into thin circles with a diameter of 15–20 cm.
Step 2
For the filling: remove the tough stems from the herbs and chop the leaves. Cut the onion into thin rings and sauté in a saucepan with 1 tablespoon of melted butter over medium heat until soft, about 3–4 minutes. Remove from heat and let cool; then add the herbs to the saucepan and mix well.
Step 3
Place the filling on one half of the dough circle, season with salt and pepper, and immediately fold the khutab into a half-moon shape, taking care to keep the juices from the herbs from spilling onto the edges. Fry in a well-heated dry skillet without oil for 2 minutes on each side.
Step 4
Serve with sour milk (matsoni or yogurt), either cold or hot, brushed with melted butter.
