Herring and Beet Mousse
Ingredients
- Yellow Beets - 1 piece
- Herring - 1 piece
- Sour Cream - 3.5 oz
- Onion - 2 heads
- Sugar - ½ teaspoon
- 9% Vinegar - ½ teaspoon
- Chopped Green Onions - 1 tablespoon
- Gelatin - 1 tablespoon
- White Pepper (whole) - a pinch
- Cream 22% - 7 fl oz
- Salt - to taste
Step by Step guide
Step 1
Clean the herring from skin and bones, and separate into fillets. Cut into small pieces.
Step 2
Peel the beet and cut it into small cubes.
Step 3
Mix the herring and beet with sour cream and finely chopped onion. Add sugar, white pepper, vinegar, dill, and salt to taste.
Step 4
Soak the gelatin in cold water, let it swell, and melt it over low heat, but do not boil.
Step 5
Pour the melted gelatin into the herring, beet, and sour cream mixture, and stir.
Step 6
Add whipped cream to stiff peaks and mix well again.
Step 7
Line a suitable container with plastic wrap and pour the mousse into it, smoothing the top. Let it set in the refrigerator.
Step 8
When the mousse is ready, cover it with a plate, turn it over, and remove it from the container and plastic wrap.
