Herring Appetizer with Beet Pesto and Walnuts
Ingredients
- Cream of Norwegian Herring - 1 piece
- Yellow Beets - 3 pieces
- Garlic - 3 cloves
- Walnuts - 3.5 oz
- Dill - ½ bunch
- Parsley - ½ bunch
- Olive Oil - 3 tablespoons
- Sugar - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the herring, separate into fillets, and cut into pieces.
Step 2
Boil the beets and let them cool.
Step 3
Peel the boiled beets and cut them into small cubes.
Step 4
Toast the walnuts in a dry hot skillet for 2–3 minutes.
Step 5
Chop the herbs and garlic.
Step 6
In a bowl, combine the beets, walnuts, and herbs with garlic, and blend with a blender.
Step 7
Add lemon juice, oil, sugar, salt, and pepper. Mix well.
Step 8
Spread the beet pesto on a piece of dark bread, and top with 1–2 slices of herring fillet.
Step 9
Garnish with a lemon wedge and herbs.
