- Cream of Norwegian Herring - 1 piece
- 10% cream - 7 fl oz
- Scallions - ½ bunch
- Sugar - 1 teaspoon
- Spanish onions - 1 head
- Frozen black currant puree - 7.1 oz
- Meyer Lemon Juice - 1 teaspoon
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the herring from the skin and entrails, separate into fillets, and remove the bones. Cut the fillets into small pieces.
Step 2
Finely chop the green and red onions. Add sugar, lemon juice, black pepper, and pour in the cream.
Step 3
Mix everything well, add the herring pieces and currants. Mix again thoroughly and season with pepper to taste.
Step 4
Refrigerate for a few hours (or overnight).
Step 5
Serve the finished appetizer in dessert bowls or cups, garnished with a currant berry and a piece of herring.
