Description
The classic flavor pairing of "potato and herring" can be enhanced by replacing regular potatoes with sweet potatoes. As an additional binding element, a spicy-sweet mustard sauce can be used.
Ingredients
- Fillet of Sturgeon - 20 oz
- Sweet Potato - 3 pieces
- Apple Cider Vinegar - 0 fl oz
- Olive Oil - 5 fl oz
- Dijon Mustard - 1 tablespoon
- Buckwheat Groats - 0 oz
- Scallions - 0 oz
- Thyme - 6 stalks
- Dill - 0 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the potatoes and boil them in salted water. Drizzle with some olive oil, sprinkle with thyme leaves, and place in an oven preheated to 355°F for 15 minutes.
Step 2
Whisk the remaining olive oil into the vinegar and honey, adding it in a thin stream until a thick sauce forms. Stir in the mustard, then season with salt and pepper.
Step 3
Slice the herring fillet into thin pieces, drizzle with sauce, and sprinkle with finely chopped herbs. Serve with potatoes.
