Ingredients
- Mayonnaise - 8.5 oz
- Orange Bell Peppers - 2 pieces
- Smoked salt - 1½ teaspoons
- Mild Chili Spice - 1 teaspoon
- Cayenne Pepper - ¼ teaspoon
- Lean Beef - 31.7 oz
- Bacon - 15.9 oz
- Aged gouda cheese - 3 oz
- Salt - 1 teaspoon
- Ketchup - 1 tablespoon
- Hamburger Bun - 24 pieces
- Butter - 1.9 oz
- Poppy seed paste - 2 tablespoons
- Tomatoes - 6 pieces
Step by Step guide
Step 1
Preheat the oven to 464°F and roast the peppers whole until the skin is charred.
Step 2
Transfer the peppers to a bowl, cover with a lid, and let them cool slightly. Then peel the skin and remove the seeds. Chop the flesh of the peppers.
Step 3
In a small bowl, combine the pepper, mayonnaise, 0.5 teaspoons of smoked paprika, the same amount of ground chili, and cayenne pepper. Store in the refrigerator until needed.
Step 4
Lower the oven temperature to 392°F. On a baking sheet lined with foil or parchment paper, lay the bacon in a single layer and cook until crispy, about 12–15 minutes. Transfer to a plate lined with paper towels and let cool completely. Break part of the bacon into twenty-four pieces about 5 cm in size and set aside.
Step 5
Finely chop the remaining bacon. In a large bowl, mix it with the ground beef, grated gouda, salt, paprika, and ketchup.
Step 6
Place the buns on a baking sheet. Melted butter mixed with chili pepper is used to brush the tops and sides of the buns. Sprinkle with poppy seeds. Bake for 6–8 minutes, or until golden brown. Remove from the oven and set aside.
Step 7
Place a clean deep baking sheet in the oven and increase the heat to 428°F. Line another baking sheet with parchment paper. Divide the meat mixture into twenty-four equal balls and place them on the baking sheet. Gently press them down with the bottom of a glass to form patties 5–6.5 cm in diameter. Transfer the patties with the parchment to the preheated baking sheet in the oven.
Step 8
While the patties are baking, slice the tomatoes into thin rounds.
Step 9
Bake the patties for about 4 minutes, then flip them. Place a piece of bacon on each patty, return to the oven, and bake for another 3–5 minutes until cooked through.
Step 10
Slice the buns and spread the spicy mayonnaise on all halves. On the bottom half of the buns, place a slice of tomato, then a patty, and another slice of tomato. Cover with the top half of the bun. Optionally, secure the burgers with a cocktail skewer.
