Homemade Chicken Aspic
Ingredients
- Pork Neck - 2 pieces
- Chicken Drumstick - 3 pieces
- Carrot - 1 piece
- Dill - 1 bunch
- Parsley - 1 bunch
- Onion - 2 pieces
- Garlic - 1 head
- Bay leaf - to taste
- Green peppercorns - 10 pieces
- Salt - to taste
Step by Step guide
Step 1
Boil in a large 10-liter pot. Cover the hooves with water, bring to a boil, then turn off the heat. Let it sit for 2–3 hours.
Step 2
Then drain the water, wash the hooves under running water, and scrape them with a knife.
Step 3
Again cover the hooves with water. Boil the hooves for 5 hours.
Step 4
An hour before it's done, add unpeeled carrot and onion to the pot. Add the whole chicken drumsticks. Season with salt.
Step 5
Half an hour before it's done, add bay leaf and black peppercorns.
Step 6
Once cooked, strain the broth. Discard the onion and carrot.
Step 7
Bring the broth to a boil again.
Step 8
Separate the meat from the bones. Cut it into small strips.
Step 9
Also finely chop the skin and cartilage. Add enough to the dish to thicken it well; if you add all of it, the aspic will be too thick.
Step 10
Finely chop the dill, parsley, and garlic.
Step 11
In pre-prepared bowls, place the herbs with garlic and meat at the bottom. Pour in the broth.
Step 12
Let it cool at room temperature first, then once it cools down, you can put it in the refrigerator or on a cold balcony.
