Homemade Okroshka Kvass
Ingredients
- Rye Bread - 14.1 oz
- Sugar - 7.1 oz
- Water - 7 qt
- Dry yeast - 0.5 oz
Step by Step guide
Step 1
Cut the rye bread into pieces and brown it in the oven.
Step 2
Break it into small pieces, place in a pot, and pour 4 liters of hot water over it. Let it steep in a warm place for 1.5 hours.
Step 3
Strain the infusion and pour 2.5 liters of hot water over the bread crumbs again. Let it steep for another 1.5 hours.
Step 4
Strain the second infusion and combine it with the first.
Step 5
Add sugar and the yeast dissolved in warm infusion.
Step 6
Leave the wort in a warm place to ferment for 12 hours.
Step 7
Strain the resulting kvass, pour it into bottles, and chill.
