- Kefir - 1 qt
- Ocean salt - to taste

Take fresh kefir of medium fat content.
Step 2
Place it in the freezer for 6–8 hours.
Step 3
Cut open the package and remove the frozen kefir.
Step 4
Prepare a sieve or colander.
Step 5
Line it with several layers of cheesecloth.
Step 6
Place the kefir in the cheesecloth.
Step 7
After a few hours, once the kefir has thawed (about 12 hours), squeeze the resulting cheese through the cheesecloth to separate it from the whey.
Step 8
Transfer the cheese to a deep bowl.
Step 9
Add salt to taste.
Step 10
Serve.
