Homemade Vegetable Borscht
Ingredients
- Beet - 1 piece
- Carrot - 1 piece
- Onion - 1 piece
- Cabbage - 1 piece
- Potato - 6 pieces
- Ketchup - 2 tablespoons
- Salt - to taste
- Vegetable Oil - to taste
Step by Step guide
Step 1
Add peeled medium potatoes to a pot of water.
Step 2
Turn on medium heat under the pot.
Step 3
When white foam appears, remove it with a spoon or skimmer.
Step 4
Chop the cabbage into small pieces.
Step 5
Grate the carrot (medium-sized) and beet (palm-sized) on a large grater (can be done in a food processor).
Step 6
Add cabbage to the partially cooked potatoes.
Step 7
Salt the water.
Step 8
Heat a frying pan with vegetable oil.
Step 9
Cut the onion into small cubes.
Step 10
Sauté the carrot and beet. After a couple of minutes, add the onion.
Step 11
Add ketchup and a pinch of salt to the frying pan.

Sauté for 5 minutes.
Step 13
When the potatoes are ready, add the carrot and beet mixture to the pot.
Step 14
Taste for salt; if needed, it's better to add it now. Sometimes the beet can give the borscht sweetness.
Step 15
Leave on low heat for a couple of minutes with the lid on.

Let the borscht rest for 10–15 minutes off the heat.
Step 17
The borscht will be thick in a medium pot with a rich flavor.

Serve with your favorite sauce (mayonnaise, sour cream), herbs, and it can also be enjoyed cold.
