Ingredients
- Water - 3 qt
- Pears - 2 lbs
- Honey - 10.6 oz
- Star anise - 2 pieces
- Cinnamon - 1 piece
- Lemon - 1 piece
Step by Step guide
Step 1
Cut the pears in half and remove the core.
Step 2
Slice the pears into thick wedges. Drizzle the pears with lemon juice and toss to combine.
Step 3
Combine 3 liters of lukewarm water with honey, add star anise and cinnamon, and bring to a boil while stirring to dissolve the honey.
Step 4
Place the pears in the syrup and simmer over low heat for about 5 minutes.
Step 5
Pour boiling water over the jars and lids to warm them up. Divide the compote among the jars.
Step 6
Place a rack at the bottom of a large pot. Arrange the jars on the rack (they should not touch each other) and cover the jars with lids.
Step 7
Pour hot water in until it covers the jars up to their shoulders.
Step 8
Bring the water to a boil, then pasteurize 1-liter jars for 25 minutes, 700–800 ml jars for 20 minutes, and 400–500 ml jars for 15 minutes.
Step 9
Seal the jars.
Step 10
Flip it over and cover with a blanket. The compote will be ready in a day, but it can be stored for a long time.
