Ingredients
- Tomatoes - 2 pieces
- Yellow Beets - 8.1 oz
- Olive Oil - 3 tablespoons
- Chinese green beans - 8.1 oz
- Garlic - 2 cloves
- Chili Flakes - a pinch
- Dry White Wine - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Lemon - 1 piece
Step by Step guide
Step 1
In a large pot, bring salted water to a boil. Using a slotted spoon, lower the tomatoes into the water and leave for 1 minute. Quickly transfer them to ice water, leaving the water in the pot boiling. Peel the tomatoes.
Step 2
Meanwhile, trim the ends of the yellow beans and cut them in half. Drop them into the boiling water for 2-3 minutes. Remove with a slotted spoon, transfer to ice, or rinse under cold water and dry well.
Step 3
Repeat the same with the green beans, but cook them for only 1 minute.
Step 4
Heat the olive oil in a deep skillet over medium heat and add the minced garlic. Sauté for about 1 minute. Add a pinch of red pepper flakes and the peeled tomatoes. Break them into pieces with a wooden spoon and cook for about 5 minutes. Pour in the wine and cook for another minute.
Step 5
Add the beans to the tomato sauce and mix well until the beans are heated through. Season with salt and pepper.
Step 6
Transfer to a serving bowl and drizzle with lemon juice. Serve immediately.
