Ingredients
- Poultry - 14.1 oz
- Carrot - 3.5 oz
- Beetroot - 10.6 oz
- Onion - 5.3 oz
- Vegetable Oil - 2 spoons
- Passata Tomato Sauce - 2 spoons
- Parsley - 0.7 oz
- Dill - 0.7 oz
- Potato - 10.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Sour Cream - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Prepare the chicken broth by placing the chicken in cold water, bringing it to a boil, and then reducing the heat. Skim off any foam and simmer for about an hour. After that, strain the broth.
Step 3
Finely chop the beetroot.
Step 4
Finely chop the carrot.
Step 5
Finely chop the onion.
Step 6
Sauté the onion and carrot in vegetable oil until the onion turns golden brown.
Step 7
Sauté the beetroot separately until it develops a caramelized crust.
Step 8
Add tomato paste to the beetroot.
Step 9
Remove the chicken from the broth, separate the meat from the bones, and chop the meat finely.
Step 10
Add the diced potatoes to the boiling broth and cook for 5–7 minutes until the potatoes are tender.
Step 11
Add the chicken there as well.
Step 12
Add the sautéed vegetables, bring to a boil, then remove from heat.
Step 13
Finely chop the herbs.
Step 14
When serving, add sour cream and herbs to the soup.
