Hot Beetroot Soup with Sour Cream
Ingredients
- Potato - 5.3 oz
- Chicken Broth - 17 fl oz
- Beetroot - 5.3 oz
- Onion - 3.5 oz
- Lemon - ½ piece
- Passata Tomato Sauce - 0.5 oz
- Parsley - 0.4 oz
- Dill - 0.4 oz
- Sour Cream - 1.6 oz
- Safflower Oil - 1 fl oz
Step by Step guide
Step 1
Peel the potatoes, cut them into cubes, and place them in a saucepan with the broth. Cook over medium heat for 15 minutes.
Step 2
Peel and finely chop the onion, peel the beetroot and grate it on a coarse grater.
Step 3
Squeeze the juice from the lemon; finely chop the dill and parsley.
Step 4
Heat the oil in a pan, then sauté the onion over medium heat until golden brown for 1 minute. Add the beetroot and simmer for 3 minutes.
Step 5
Add the tomato paste and lemon juice to the pan and simmer over low heat for 10 minutes.
Step 6
Transfer the contents of the pan to the saucepan with the broth, season with salt and pepper, bring to a boil, and cook over low heat for 10 minutes.
Step 7
Pour the soup into bowls, garnish with parsley and dill; serve with sour cream.
