Description
The very same pie grandma used to make, but in a version for the laziest. Grated apple mixed with bread crumbs truly resembles warm, airy dough, and if you use buttery, airy brioche instead of regular sandwich bread, you can achieve a striking similarity to the real Charlotte. A perfect ending for an otherwise ordinary dinner, if you suddenly want to surprise your family.
Ingredients
- White bread - 8 pieces
- Apple - 1 piece
- Butter - 0.7 oz
- Meyer Lemon Juice - 1 tablespoon
- Raw cane sugar - 1 tablespoon
- Cinnamon - to taste
- Natural Yogurt - 2 spoons
- Fresh Berries - to taste
- Powdered Sugar - to taste
Step by Step guide
Step 1
Use a glass to cut out circles from four pieces of bread.
Step 10
Arrange slices of apple on top of the filling, lightly sprinkle with cinnamon, and place a berry in the center — blueberry, currant, or cranberry.
Step 11
Place in the preheated oven for 15 minutes. Remove and dust with powdered sugar through a sieve.
Step 2
Arrange the four remaining pieces of bread on a baking sheet lined with parchment paper, and place the pieces with holes on top.
Step 3
Thoroughly brush the resulting tart shells with butter, both inside and out.
Step 4
Cut the removed bread centers into small cubes.
Step 5
Cut the apple in half, remove the core, and slice it into four thin rounds — one for each sandwich. Drizzle with lemon juice.
Step 6
Peel the remaining apple and slice it into thin strips.
Step 7
Crack an egg into a bowl, add yogurt, a pinch of cinnamon, and mix well.
Step 8
Add the julienned apple, sugar, and cubes of bread.
Step 9
Mix well and immediately, without letting the filling become soggy, spoon it into the pastry shells.
