Ingredients
- Butter - 1 tablespoon
- Onion - 1 head
- Vegetable Oil - 1 tablespoon
- Fresh Mushrooms - 17.6 oz
- Garlic - 1 clove
- Salt - to taste
- Chopped Sage Leaves - 1 teaspoon
- Ground Black Pepper - to taste
- Dry White Wine - ¼ cup
- Sour Cream - 5 tablespoons
- Ricotta cheese - 4.2 oz
- Mayonnaise - 1.6 oz
- Melted Cheese - 2.1 oz
- Grated Pecorino Pepato Cheese - 1.1 oz
Step by Step guide
Step 1
Heat the butter and vegetable oil in a skillet, add the sliced onion and sauté for about 20 minutes until it begins to caramelize.
Step 2
Add the thinly sliced mushrooms and cook for another 20 minutes until they start to caramelize.
Step 3
Add the finely chopped garlic and thyme and cook for another minute. Season with salt and pepper.
Step 4
Pour in the wine and let it evaporate.
Step 5
Transfer half of the mushroom mixture to a blender and puree until smooth.
Step 6
Preheat the oven to 356°F.
Step 7
Mix the remaining mushrooms in a baking dish with the ricotta, sour cream, mayonnaise, grated mozzarella, Parmesan, and mushroom puree. Mix well and bake for 20-40 minutes until golden brown.
