Hot Salted Pork Fat
Ingredients
- Pork fat - 2 lbs
- Water - 1 qt
- Onion - 3.5 oz
- Garlic - 7 cloves
- Bay leaf - 2 pieces
- Salt - 7.1 oz
- Sugar - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Fill a container with water, add sugar, salt, bay leaves, and onion peels, and bring to a boil. You can add more onion peels if desired.
Step 2
When the water boils, add the washed pork fat and let it cook for another 20–30 minutes. Remove the pork fat from the heat and let it soak in the broth for 8–10 hours. Then take the pork fat out of the brine and dry it.
Step 3
While the pork fat is drying, slice the garlic thinly and mix it with ground black pepper. Roll the dried pork fat in the resulting mixture, wrap it in foil, and place it in the freezer overnight.
