Hungarian Spinach Cream Soup
Ingredients
- Spinach - 17.6 oz
- Onion - 2 pieces
- Butter - 1.1 oz
- Wheat Flour - 3 tablespoons
- Salt - to taste
- Egg white - 2 pieces
- Ground Black Pepper - to taste
- Bacon - 5.3 oz
- Cream - 8 fl oz
Step by Step guide
Step 1
Boil the spinach and blend it. Save the water used for boiling the spinach.
Step 2
Chop the onion and sauté it in butter, adding the flour.
Step 3
Combine the spinach water with the onion and spinach puree. Bring to a boil and cook until the soup thickens. Add salt and pepper. Pour in the cream while stirring constantly. Heat, but do not boil. Remove from heat.
Step 4
Hard boil the eggs, slice them, and add to the soup.
Step 5
Slice the bacon thinly and fry it in a dry pan. Add to the soup.
