Ingredients
- Milk - 16 fl oz
- Water - 8 fl oz
- Cardamom - 10 pieces
- Star anise - 2 pieces
- Grated Ginger Root - 0.5 oz
- Ground clove - 10 pieces
- Green peppercorns - 10 pieces
- Spices - 10 pieces
- Chopped almonds - 5 pieces
- Assam Tea - 2 teaspoons
- Vanilla salt - to taste
- Nutmeg - to taste
- Raw cane sugar - to taste
- Cinnamon - 1 piece
Step by Step guide
Step 1
Mix water with milk. Bring to a boil over low heat.
Step 2
Meanwhile, in a dry skillet, roast the cinnamon, crushed cloves, star anise, pepper, a piece of ginger root, almonds, and cardamom (if in pods, open them and remove the seeds; if ground, add to the drink at the end).
Step 3
Add all the spices to the milk without removing it from the heat, and simmer for 3–5 minutes while stirring.
Step 4
Add sugar, vanilla, nutmeg, and cardamom (if ground) to taste.
Step 5
Add the tea and simmer for another 5 minutes.
Step 6
Remove from heat and let steep for a few minutes.
Step 7
Serve hot.
