Description
Recipe by Edward Smith, head bartender at Lark Bistro This signature berry infusion made with ripe forest berries: strawberries, blackberries, and lingonberries is a drink with a pronounced aroma and rich flavor with a hint of acidity. This rich taste will remind you of warm summer days. The infusion is perfect as an aperitif.
Ingredients
- Vodka - 1 qt
- Strawberry - 21.2 oz
- Serviceberries - 14.1 oz
- Lingonberry - 7.1 oz
- Caramel Syrup - 5 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Sort the lingonberries, removing any damaged berries, and dry them on a paper towel.
Step 3
Sort the strawberries and blackberries as well, removing any damaged berries, and dry them on a paper towel.
Step 4
Thoroughly wash and dry the bottle or jar for the infusion. Transfer the berries into the jar.
Step 5
Add the simple syrup and vodka to the jar.
Step 6
Seal the jar and shake it several times. You can gently stir the contents with a long spoon.
Step 7
Store the jar in a dark place (for example, in a kitchen cabinet). Leave it at room temperature for 21 days.
Step 8
Every one to two days, take the jar out and shake it.
Step 9
After 21 days, strain the infusion through several layers of cheesecloth or a thin cotton cloth.
Step 10
Pour the infusion into bottles and seal them.
Step 11
Let the infusion sit for another 2 weeks before tasting. The infusion can be stored for up to 2 years; natural sediment is normal.
