Irish Potato Fritters
Ingredients
- Bacon - 1.8 oz
- Salad Potatoes - 4 pieces
- Wheat Flour - 3.5 oz
- Activated Baking Soda - 1 teaspoon
- Butter - 1 tablespoon
- Salt - to taste
- Vegetable Oil - 4 tablespoons
Step by Step guide
Step 1
Fry the bacon until crispy in a dry skillet.
Step 2
Peel and boil 2 potatoes, then mash them with a potato masher or pass through a potato ricer. Peel and finely chop the remaining potatoes in a blender until smooth or grate them on a fine grater.
Step 3
Drain the raw potato in a fine sieve and squeeze out the excess moisture.
Step 4
In a large bowl, mix the raw and cooked potatoes, flour, bacon, butter, baking soda, and salt to taste. Mix well.
Step 5
Heat a skillet over medium heat, add a small amount of vegetable oil. Place the fritters in the skillet. Fry in batches and do not overcrowd the pan.
Step 6
Fry over medium heat until golden brown, about 2-3 minutes. Carefully flip (the fritters are very delicate) and cook on the other side. Repeat with the remaining batter.
Step 7
Serve with sour cream.
