Italian Bean and Pasta Soup
Ingredients
- Canned Baby Beets - 1 can
- Semi-Smoked Sausage - 17.6 oz
- Olive Oil - 1 tablespoon
- Onion - 2 heads
- Garlic - 2 cloves
- Salt - to taste
- Spiced Tomato Juice - 28.2 oz
- Chicken Broth - 17 fl oz
- Pasta shells - 7.1 oz
- Grated Pecorino Pepato Cheese - to taste
Step by Step guide
Step 1
Rinse the beans with cold water.
Step 2
Peel the sausage, cut into pieces, fry, and place in a bowl.
Step 3
In the same skillet, sauté the onion in the rendered fat, add olive oil and garlic. Transfer to a pot, add the tomatoes along with their juice (mash the tomatoes with a fork).
Step 4
Pour in the broth, add salt, the beans, and 2 cups of water.
Step 5
Bring to a boil, cover, add the fried sausage, and heat through.
Step 6
Separately, cook the pasta in unsalted water. Drain the water. Add the pasta to the soup. Sprinkle with cheese.
