Description
This plate is called 'raw' because none of its ingredients undergoes heat treatment — except for the sun-dried tomatoes. At American restaurants, they use not just pine nuts and cashews, but a complex protein blend: in addition to these, they include Brazil nuts, hazelnuts, pistachios, sesame seeds, chia seeds, flaxseeds, hemp seeds, sunflower seeds, and pumpkin seeds.

- Pesto - 3 spoons
- Sun-Dried Tomatoes - 4 pieces
- Marinated cherries - 4 pieces
- Cashew - 2 spoons
- Pistachios - 1 tablespoon
Step by Step guide
Step 1
First, slice the zucchini into thin strips lengthwise, then chop them into long, thin strips—similar to spaghetti, just a bit thicker.
Step 2
Place the zucchini noodles in a bowl and add two tablespoons of pesto. Toss to combine and taste: if it seems a bit dry, add another tablespoon of sauce.
Step 3
You can use store-bought pesto, but it's better to make it yourself. The proportions are as follows: for half a cup of sauce, you'll need one clove of garlic, three tablespoons of sunflower seeds, six tablespoons of pine nuts, half a cup of young spinach leaves, and one cup of basil. Blend everything well in a blender, then mix in the same blender while adding a quarter cup of olive oil and salt to taste.
Step 4
Slice the sun-dried tomatoes into thin wedges and cut the cherry tomatoes in half. Chop all the nuts in a blender until they are coarsely crumbed.
Step 5
Transfer the zucchini to a plate, top with tomatoes, sprinkle with the nut mixture, and serve.
