I prepared this dish in a Oursson 5015 multicooker.
Ingredients
- Courgette - 8.8 oz
- Chinese green beans - 8.8 oz
- Eggplants - 8.8 oz
- Carrot - 5.3 oz
- Celery stalk - 4 pieces
- Marinated cherries - 8.8 oz
- Garlic - 5 cloves
- Herbs - 1 bunch
- Olive Oil - 1 fl oz
- Mild Chili Spice - 1 piece
- Salt - 0.4 oz
- Pasta (corkscrew) - 2.6 oz
- Basil - 2 pieces
- Grated Pecorino Pepato Cheese - 5 tablespoons
Step by Step guide
Step 1
Cut the vegetables into cubes of the same size, and finely chop the garlic and herbs.
Step 2
Place all the soup ingredients in the pot, except for the pasta. Reserve some herbs and garlic.
Step 3
Cook with the lid closed in 'Cook' mode for 30 minutes, without pressure.
Step 4
After the signal, add the pasta and cook in 'Cook' mode for another 5 minutes. Keep the soup in 'Warm' mode for an additional 10-15 minutes.
Step 5
Turn off the multicooker and add the remaining herbs and garlic. Ladle the thick minestrone soup into bowls, garnish with finely chopped basil and grated Parmesan, and serve.
