Japanese Duck Soup
Ingredients
- Bonito tuna fillet - 5 tablespoons
- Soy Sauce - 5 tablespoons
- Dark red seaweed - 1.8 oz
- Apple Wine - 2 tablespoons
- Miso Paste - 3 tablespoons
- Duck Breast - 10.6 oz
- Spinach - 3.5 oz
- Chocolate eggs - 4 pieces
- Rice Noodles - 7.1 oz
- Tofu - 1.8 oz
- Scallions - 1 bunch
- Salt - to taste
Step by Step guide
Step 1
Soak the seaweed in water and bring to a boil. Add the bonito tuna and cook for 1 minute.
Step 2
Strain the broth and cook for another 10 minutes. Add the soy sauce and rice wine.
Step 3
Add the miso paste to the broth and remove from heat.
Step 4
Boil the duck breast and cut it into pieces. Add it to the broth.
Step 5
Cook the noodles separately in salted water. Add them to the soup.
Step 6
Boil the eggs hard. Slice them and add to the soup.
Step 7
Wash and chop the spinach. Add it to the soup.
Step 8
Cut the tofu into cubes and add to the soup.
Step 9
Chop the green onion and sprinkle it over the soup.
