Description
Okonomiyaki are large cabbage pancakes that Japanese people often make at home. This dish is sometimes called Japanese pizza due to its simplicity of preparation and the variety of possible fillings. The base is made from egg batter and cabbage, and then you can add just about anything: ham, seafood, or vegetables. This is reflected in the name of the dish, which consists of two parts: 'okonomi' — 'what you love' or 'what you want', and 'yaki' — which denotes fried dishes in Japanese. Traditionally, okonomiyaki is topped with mayonnaise and okonomiyaki sauce and sprinkled with bonito flakes: the streams of hot air coming from the okonomiyaki cause them to move as if they were alive.

- Dashi powder - 1 tablespoon
- Wheat Flour - 5.6 oz
- Salt - ¼ spoons
- Sugar - ¼ spoons
- White Cabbage - 16.9 oz
- Scallions - 1.4 oz
- Salted pork belly - 5.6 oz
- Pickled garlic - 0.4 oz
- Yakiniku sauce - to taste
- Kewpie Japanese Mayonnaise - to taste
- Tuna - to taste
- Chicken Egg - 4 pieces
- Water - 8 fl oz
- Vegetable Oil - 17 fl oz
Step by Step guide
Step 1
Gather the necessary ingredients.
Step 2
To prepare tenkasu, mix tempura flour with 40 milliliters of cold water until smooth.
Step 3
In a small saucepan, heat vegetable oil and pour in the tempura batter in small droplets. Fry for one to two minutes, then remove the fried batter droplets.
Step 4
Transfer them to paper towels to remove excess fat.
Step 5
Dissolve the dashi powder in 200 milliliters of water. In a large bowl, mix the flour, salt, and sugar, then pour in the dashi broth, add the eggs, and knead the dough.
Step 6
Add finely chopped cabbage, green onions, minced pickled ginger, and the tenkasu balls from the first step to the dough. Mix well.
Step 7
Preheat the skillet well, then place a quarter of the prepared mixture onto it, shaping it into a round pancake about 2 cm thick.
Step 8
Place pieces of pork on the pancake and fry over medium heat until the bottom of the pancake is set.
Step 9
Then, carefully using wide spatulas, flip the okonomiyaki and cover the skillet with a lid. Cook for another 5–7 minutes.
Step 10
Brush the finished okonomiyaki with okonomiyaki sauce and drizzle with Japanese mayonnaise in a lattice pattern. Top with bonito flakes.
