Ingredients
- Oxtail - 3 pieces
- Gelatin - 0.5 oz
- Onion - 3.5 oz
- Carrot - 3.5 oz
- Garlic - 3.5 oz
- Water - 4 qt
- Ground Black Pepper - 0.8 oz
- Salt - 0.5 oz
- Herbs - 2 stalks
- Horseradish Leaves - 7.1 oz
- Onion - 0.1 oz
- Pickled Chanterelles - 1.1 oz
Step by Step guide
Step 1
Prepare a broth from the tails by adding onion, carrot, and garlic. After bringing it to a boil, simmer the tails on low heat for 3–4 hours, and add the vegetables at the end.
Step 2
Remove the meat from the bone and shred it into strands.
Step 3
Place the meat in a glass jar and pour in the broth mixed with gelatin. Allow it to set in the refrigerator.
Step 4
Garnish the set aspic with horseradish and mushrooms, then top with onions and a sprig of herbs. Serve with Borodinsky bread.
