- Fish - 2 lbs
- Gelatin - 1.1 oz
- Onion - 1 piece
- Root Vegetables - to taste
Step by Step guide
Step 1
Boil a piece of sturgeon (or sevruga, beluga) with the addition of root vegetables and cool it down.
Step 2
From the broth obtained while boiling the fish, prepare 3-4 cups of clear jelly. Cool the finished and strained jelly.
Step 3
Cut the cooked fish into thin pieces and arrange them on a tray or plate, leaving space around each piece for the jelly. Decorate the fish pieces with parsley leaves, slices of carrot, circles of fresh cucumber, pieces of crab or crayfish, and capers. Secure the decorations with the cooled jelly by pouring it over the fish pieces with a spoon.
Step 4
After that, pour the jelly over the fish pieces in two or three batches to create an even layer. Once the jellied dish cools, cut around each piece with the tip of a knife and arrange them beautifully on a plate, garnishing with bouquets of boiled carrots, turnips, potatoes, and green peas on one or both sides.
Step 5
Before serving, dress the garnish with oil and vinegar. Serve with horseradish and vinegar, and mayonnaise sauce.
