Ingredients
- Artichoke bottoms - 8 pieces
- Lemon - 2 pieces
- Olive Oil - 17 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the artichokes by removing the tough outer leaves and cutting off the tops of the inner leaves. To prevent the artichokes from browning, place them in water with lemon juice for 10 minutes.
Step 2
Remove the artichokes from the water and dry them with a paper towel. Slightly loosen the buds of the artichokes so they open up like a flower. Season with pepper and salt.
Step 3
Place the artichokes in a saucepan, pour in the olive oil (it should cover the artichokes halfway) and fry for 10 minutes over medium heat, then turn them over and fry for another 10 minutes. The oil should not be too hot, otherwise the outer leaves may burn.
Step 4
When the outer leaves turn golden, wet your palm with cold water and sprinkle the artichokes to make them crispy.
Step 5
Remove the artichokes from the oil and place them on a paper towel to drain the fat.
Step 6
Serve with lemon wedges and white bread.
