Description
You can use any type of mushrooms for this appetizer, from porcini to button mushrooms. The better the mushrooms, the more delicious the dish will be.

- Tarragon - 1 bunch
- Oyster Mushrooms - 2 lbs
- Fresh Mint - 2 stalks
- Cilantro - 1 bunch
- Green peppercorns - 1 piece
- Dry White Wine - 7 fl oz
- Chicken Egg - 3 pieces
- Salt - to taste
Step by Step guide
Step 1
Pour boiling water over the mushrooms, chop them roughly, and cook in a mixture of one cup of water and one cup of wine for fifteen to twenty minutes, until half of the liquid has evaporated.
Step 2
Finely chop the herbs and green pepper, then add them to the pot with the mushrooms. Cook for another fifteen minutes, stirring occasionally.
Step 3
Remove from heat and slowly pour the beaten eggs over the mushrooms and herbs in a thin stream. Stir quickly to prevent the eggs from curdling.
Step 4
Season with salt, return to the stove, bring to a boil, and serve immediately.
