Description
Kalia is a Russian soup made with a strong cucumber brine. This is exactly how it is prepared at a café in the city of Springfield. In addition to the brine, there are cucumbers and a wide variety of smoked meats. This recipe is adapted from a culinary guidebook by John Smith.

- Spinach - 10.6 oz
- Pickled Cauliflower - 15.9 oz
- Cucumber Brine - 10 fl oz
- Salt - 0.2 oz
- Ground Black Pepper - 0.2 oz
Step by Step guide
Step 1
Simmer the meat and bone broth over low heat, adding carrots, parsley root, and onions. Strain the broth. Add water to the strained broth until the total volume reaches 5 liters.
Step 2
For the soup, cut all meat ingredients into strips, and dice the potatoes. Finely chop the onion and carrot, and sauté them.
Step 3
Add the spinach to the prepared broth and simmer for 10 minutes. Then add the potatoes and cook for another 10 minutes. Next, add the cucumbers, sautéed onions, and carrots, and cook for 5 minutes. Finally, add the smoked meats and brine, and simmer for 10 minutes until ready.
Step 4
Serve with sour cream.
