Description
The main Georgian soup, an ideal remedy for hangovers. You can smell someone who had khashi in the morning from a distance — they reek of garlic.
Ingredients
- Beef Tri-Tip - 2 lbs
- Beef hoof - 17.6 oz
- White bread - 7.1 oz
- Milk - to taste
- Garlic - to taste
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Burn the beef legs with hooves over the fire and wash them thoroughly. Also wash and clean the tripe, but do not cut it. Soak the legs and tripe overnight in cold water in different pots. In the morning, wash the legs again, scrape them, and place them in a pot.
Step 2
Wash the tripe again, clean off anything that hasn't been removed, cut it into small pieces, and place it in another pot.
Step 3
Pour water into both pots and bring to a boil. Drain the water to get rid of any unpleasant smell and taste.
Step 4
Again pour cold water into the pots, place them over low heat, and cook until ready. The legs are done when the meat easily separates from the bone (about 6 hours), and the tripe is done when the broth turns a milky white color (about 8 hours).
Step 5
Remove the pots from the heat, mix their contents, and put them back on the heat.
Step 6
Cut the white bread into pieces, preferably Georgian bread. Pour milk into a bowl and soak the bread in it. When the liquid in the pot has evaporated by half, add the bread, stir, and cook for another 30 minutes. The soup will turn white.
Step 7
Pour boiling water into the pot so that the liquid covers the meat. Bring to a boil and cook over low heat without salt for another hour to an hour and a half.
Step 8
Serve salt, pepper, and crushed garlic separately with khashi. In some families, the soaked bread is not added to the pot but served on the table so that everyone can add it to their bowl to taste. Khashi is eaten hot, washed down with vodka and Borjomi.
