Description
Kimchi is primarily a Korean method of fermenting vegetables with red pepper, ginger, and fish sauce. However, this dish most commonly refers to the extremely popular Korean side dish – spicy napa cabbage. The fermentation process takes just two days, and by the third day, it will be complete, allowing you to enjoy the cabbage or store it for later.
Ingredients
- Napa Cabbage - 1 piece
- Salt - 0 oz
- Water - 5 fl oz
- Glutinous Rice Flour - ½ spoons
- Brown Sugar - ½ spoons
- Daikon - 5 oz
- Carrot - 0 oz
- Scallions - 0 oz
- Garlic - 6 cloves
- Ginger - 0 oz
- Onion - 0 oz
- Fish Oil - 2 spoons
- Salted crackers - 1 tablespoon
- Ground Korean Red Pepper - 0 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Cut the cabbage in half at the base, then tear it into two halves. Make a few cuts at the base of each half, ensuring that the leaves remain attached at the base.
Step 3
Thoroughly salt the cabbage between the leaves, using more salt where the leaves are thicker.
Step 4
Place the cabbage in a bowl of water, ensuring it is fully submerged, and let it soak for 2 hours, turning it every 30 minutes.
Step 5
Combine water with rice flour in a small saucepan.
Step 6
Simmer over low heat, stirring, for 10 minutes. Add sugar, stir for another minute, then remove from heat and let cool.
Step 7
Julienne the carrot and daikon.
Step 8
Chop the green onions. Blend the garlic, onion, and ginger in a blender.
Step 9
Combine the rice porridge with fish sauce and minced garlic, onion, and ginger. Add the shrimp and red pepper. Stir with a wooden spoon until well combined. Add the julienned carrot and sliced green onion. Mix well.
Step 10
Rinse the cabbage in clean water, cutting the halves into quarters.
Step 11
Trim the stems. Spread sauce on each cabbage leaf, fold it in half, and pack it tightly in a covered dish.
Step 12
Leave at room temperature for 2 days; it will begin to ferment. At that point, you can serve it or store it in the refrigerator.
