Kutabs with Chicken and Dill

Ingredients

  • Wheat Flour - 17.6 oz
  • Water - 10 fl oz
  • Salt - 1 teaspoon
  • Ground meat - 7.1 oz
  • Onion - 1 head
  • Dill - to taste
  • Ground Black Pepper - to taste
  • Butter - 1.8 oz

Sift the wheat flour into a deep bowl to aerate it.

Make a well and add 1 teaspoon of salt.

Gradually pour water into the flour, mixing thoroughly.

Knead the dough. It should not be overly floury.

Divide the finished dough into 8–9 equal balls.

Roll each ball into a thin flatbread with a diameter of 20–25 cm. Lightly dust a silicone mat with flour to prevent sticking.

In a blender, puree the onion with dill. Add the mixture to the ground chicken and mix thoroughly until homogeneous. Season with salt and pepper to taste.

Place the filling only on one half of the rolled-out flatbread. Spread it in a thin layer, leaving a 1.5–2 cm border from the edge.

Cover the filling with the other half of the dough and press down with your hand to release excess air.

Seal the edges of the kutabs with a fork, pressing down on the dough.

Heat a skillet. Place the kutabs on a dry skillet.

Fry for 1–2 minutes on each side.
