Lahmacun with Lamb
Ingredients
- Kefir - 2 cups
- Wheat Flour - 17.6 oz
- Salt - to taste
- Lamb Neck Fillet - 17.6 oz
- Onion - 2 pieces
- Garlic - 5 cloves
- Passata Tomato Sauce - 3 tablespoons
- Herbs - to taste
- Ground Black Pepper - to taste
- Red Long Chili Peppers - to taste
Step by Step guide
Step 1
Pour the kefir into a mixing bowl. Add the flour to the kefir. Add a teaspoon of salt. You can add a couple of tablespoons of olive oil, but it's not necessary.
Step 2
Mix everything directly in the bowl. If necessary, add more flour. The dough should stop being sticky so that it can be kneaded.
Step 3
Sprinkle the table with flour and knead the dough to the desired consistency. Our goal is to get a stiff dough, like for dumplings.
Step 4
Place the finished dough in a plastic bag and put it in the refrigerator.
Step 5
Filling: pass the lamb meat through a meat grinder twice.
Step 6
In a blender, chop the onion, garlic, and fresh herbs. Add everything to the minced meat. Any herbs will work: cilantro, parsley, dill.
Step 7
Add 4 tablespoons of tomato paste to the minced meat. You can substitute the paste with a few chopped tomatoes. Season with salt and pepper generously. The lahmacun should be spicy.
Step 8
Thoroughly mix the filling. The filling should be liquid, as it needs to be spread on the flatbreads. If the filling is not liquid enough, add some water and mix.
Step 9
Cut pieces from the dough and roll them into balls the size of a table tennis ball.
Step 10
Flatten the balls, dust them with flour, and roll them into thin flatbreads like lavash.
Step 11
Place the finished flatbreads on a baking sheet.
Step 12
Spread the filling in a thin layer over the flatbreads. Do not put the filling in a thick layer, otherwise, the juice from the filling will run onto the baking sheet and burn.
Step 13
Place the baking sheet in a preheated oven at 428°F and bake for 7-8 minutes, then remove from the oven.
Step 14
The edges of the finished lahmacun should be slightly browned.
Step 15
Serve the finished lahmacun on a plate. First, place one flatbread meat side up, then flip a second flatbread on top of it meat side down. And so on.
