Lamb and hummus in pita
Ingredients
- Onion - 1 head
- Rack of Lamb - 17.6 oz
- Garlic - 5 cloves
- Cilantro - 1.1 oz
- Olive Oil - to taste
- Zaatar - 1 tablespoon
- Pide bread - 4 pieces
- Chickpea - 10.6 oz
- Mixed salad greens - 2.6 oz
- Tahini - 1 tablespoon
- Meyer Lemon Juice - 3 tablespoons
Step by Step guide
Step 1
In a blender, combine the lamb, 3 cloves of garlic, onion, zaatar, and cilantro leaves. Blend well. Transfer to a bowl, cover, and refrigerate for 1 hour.
Step 2
With wet hands, shape the mixture into 8 sausages. Preheat the grill and brush it with oil. Brush the sausages with oil. Grill until cooked through, about 8 minutes, turning occasionally.
Step 3
For the hummus, drain the chickpeas, reserving the liquid. Place the chickpeas in a blender, add the remaining chopped garlic and tahini. Blend, adding lemon juice and 3 tablespoons of the reserved chickpea liquid. Blend until smooth. Add more lemon juice or liquid if needed. Season with salt and pepper.
Step 4
Brush one side of the pitas with oil and sprinkle with zaatar. Place on the grill, oil side up, and grill for 2-3 minutes.
Step 5
Place the pitas on serving plates, spread with hummus, top with 2 lamb sausages and salad greens. Roll up into a wrap.
