- Rack of Lamb - 2 lbs
- Leek - 10.6 oz
- Onion - 1 head
- Celery salt - 14.1 oz
- Carrot - 1 piece
- Herbs - 1 bunch
- Salt - to taste
- Rice - 3.5 oz
Step by Step guide
Step 1
Rinse the lamb, cover it with cold water, and bring to a boil. Skim off the foam. Add the onion, whole carrot, celery, and parsley. Salt to taste. Cook for 2 hours, constantly skimming the foam. Remove the meat, vegetables, and strain the broth.
Step 2
Peel and chop the vegetables - leek, celery, carrot, and onion. Salt to taste.
Step 3
Add rice to the broth and cook for 15 minutes. Then add the vegetables and cook until the rice is fully cooked.
Step 4
Cut the lamb and add it to the soup.
Step 5
Garnish with chopped herbs.
