Ingredients
- Lard - 26.5 oz
- Water - 17 fl oz
- Salt - 3.5 oz
- Sugar - 1.8 oz
- Allspice berries - 10 pieces
- Ground coriander - 1 teaspoon
- Bay leaf - 3 pieces
- Garlic - 1 head
- Lemon-Pepper Mix - 2 teaspoons
- Dill - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Pour 500 ml of clean water into a pot.
Step 3
Add 50 g of sugar to the pot.
Step 4
Add 100 g of salt to the pot.
Step 5
Add 1 teaspoon of ground coriander to the pot.
Step 6
Add 10 allspice berries to the pot.
Step 7
Add 3 bay leaves.
Step 8
Cover the pot with a lid and bring to a boil. Boil the brine for 5 minutes. Let the brine cool under the lid.
Step 9
Cut the lard into portion-sized pieces.
Step 10
Place the lard in a jar without pressing it down.
Step 11
Pour the cooled brine into the jar with the lard.
Step 12
Cover the jar with a lid and let it marinate for 3 days.
Step 13
Peel the garlic, wash it well under running water. Press the garlic through a garlic press.
Step 14
Remove the lard from the brine and dry it with a paper towel.
Step 15
Coat the lard well on all sides with the pepper mix.
Step 16
Rub the lard pieces on all sides with the prepared garlic.
Step 17
Place in a clean, dry container. Store the lard in the refrigerator. Before serving, optionally roll in finely chopped fresh dill.
