Lasagna Soup

Ingredients

  • Sausages - 17.6 oz
  • Onion - 1 piece
  • Olive Oil - 2 tablespoons
  • Baking Tomatoes - 1 can
  • Campbell's Beef Broth - 6 cups
  • Passata Tomato Sauce - 2 tablespoons
  • Garlic - 1 clove
  • Pasta shells - 8.8 oz
  • Dried Rosemary - 1 tablespoon
  • Ricotta cheese - 7.1 oz
  • Salt - to taste
  • Grated Pecorino Pepato Cheese - 3.5 oz
  • Ground Black Pepper - to taste
  • Red Long Chili Peppers - 1 teaspoon

Step by Step guide

Step 1

Heat the oil in a pot over medium heat, add the sliced sausages, and sauté for 5 minutes.

Step 2

Add the onion and cook for another 5 minutes until softened. Add the garlic, oregano, and red pepper flakes, and cook for 1 minute. Add the tomato paste and sauté for 3–4 minutes.

Step 3

Add the tomatoes to the mixture, pour in the broth, mix well, bring to a boil, reduce the heat, and simmer for 20 minutes.

Step 4

Add the pasta and cook until al dente. You can also cook it separately and add it to the soup when serving. Season with salt and pepper to taste, and add basil and any herbs you prefer.

Step 5

While the soup is simmering, mix the cheeses.

Step 6

Pour the soup into each bowl, add the cheese mixture, and optionally add mozzarella, basil, and any herbs you prefer.
