Layered Mushroom Appetizer with Cheeses and Green Onions
Ingredients
- Fresh Mushrooms - 3 cups
- Crackers - ½ cup
- Butter - 2 tablespoons
- Scallions - 2.6 oz
- Monterey Jack Cheese - 1.8 oz
- Cottage cheese - 2 cups
- Cheshire Cheese - ½ cup
- Farm fresh eggs - 2 pieces
- Paprika - ¼ teaspoon
- Cayenne Pepper - ¼ teaspoon
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
In a skillet, melt 1 tablespoon of butter and sauté the finely chopped mushrooms until soft.
Step 3
Meanwhile, place the crackers in a bag and crush them (or blend them) and add to the mushrooms. Mix well and remove from heat.
Step 4
Spread the mushroom mixture on the bottom of a round baking dish.
Step 5
Melt another tablespoon of butter in the skillet and sauté the finely chopped green onions until soft. Spread evenly over the mushrooms.
Step 6
Top with grated cheeses.
Step 7
In a blender, combine the cottage cheese, eggs, and cayenne pepper until smooth. Spread over the cheese and level it out.
Step 8
Sprinkle with paprika on top.
Step 9
Bake for 25-30 minutes. Cool for 10-15 minutes and cut into pieces.
