Description
Traditionally, lecho is made with Hungarian wax peppers, which have thinner walls and less moisture than bell peppers. Hungarian peppers can be substituted with seasonal ground peppers.
Ingredients
- Onion - 2 heads
- Sweet Pepper - 0.2 oz
- Tomatoes - 5 pieces
- Bacon - 1.8 oz
- Paprika - 1 tablespoon
- Sausages - 4 pieces
- Salt - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Cut the bacon into thin strips.
Step 3
Slice the onion into thin strips.
Step 4
Cut the peppers into thin strips.
Step 5
Place the bacon in a warming skillet. Render the fat from the bacon, gradually increasing the heat; this will take about 5 minutes. Add the onion and sauté over medium heat, stirring until the onion becomes translucent.

Add the paprika, stir, and immediately add the chopped tomatoes.

Add the chopped peppers. Season with salt, stir, cover with a lid, and simmer on low heat for 25-30 minutes.

Add the coarsely chopped sausages and simmer covered for another 10 minutes.

Then remove the lid and simmer, stirring occasionally, for another 15 minutes, until the excess moisture has evaporated.
Step 10
Serve with bread.
